Ultimate Clean Eating Staple: Flavorful Chicken and Veggie Bowl


I must confess, clean eating isn't always a walk in the park. It demands more time and effort in the kitchen, but the health benefits are absolutely worth it. This dish has become my daily staple, especially for dinner. It's not only delicious but also versatile. Feel free to swap your favorite vegetables and spices to keep things interesting.

Here's how you can make it:


Ingredients

  • ½ to 1 cup of skinless chicken breasts, cut into bite-sized pieces

  • 1 tablespoon olive oil

  • ½ cup onion, diced

  • 1 bell pepper (any color), diced

  • 1 ear of fresh corn, kernels cut off the cob

  • 1 zucchini, diced

  • Salt and pepper to taste (or whatever spices you prefer)

  • Optional topping: 1/4 cup feta cheese, crumbled


Instructions

  1. Prep the Ingredients: Prepare all the vegetables by dicing the onion, bell pepper, and zucchini, and cutting the corn kernels off the cob into a bowl. Cut the chicken into bite-sized pieces.

  2. Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the chicken starts to brown but is not fully cooked.

  3. Add Vegetables: Add the diced onion, bell pepper, and corn kernels to the skillet with the chicken. Continue to cook for another 2-3 minutes, stirring occasionally, until the vegetables start to soften.

  4. Add Zucchini: Add the diced zucchini to the skillet and cook for an additional 2-3 minutes, until the zucchini is tender and the chicken is fully cooked through.

  5. Assemble the Dish: Pour the cooked chicken and vegetable mixture into a bowl. Top with the crumbled feta cheese or other topping of your choice.

  6. Serve: Serve immediately and enjoy your healthy and tasty clean eating dish.
