Lemons... Nice & Easy

Living in California, I have access to a lot of lemons from my friends.


I like to make fresh lemonade from the juice.  I save miscellaneous glass jars and use my lemon squeezer to extract the juice and freeze them.  Normally, I have almost a year’s worth of lemon juice for cooking and lemonade.  Some friends freeze the juice in ice cube trays, which is another option.  Make sure that you don’t fill the jars to the brim or they might crack…trust me on this! 

Something that I did recently has been a game changer for my water and my tea.  A friend gave me some lemons that have a smooth skin.  Since I was up to my ears in lemon juice, I decided to slice them and freeze them.  I got a large Ziplock bag and layered the slices in between parchment paper so that they wouldn’t stick together when they froze.  Once frozen, I removed the parchment paper and separated the slices into separate bags.

Now, if I want a nice up of tea or to spruce up my water, adding a lemon slice is easy peasy!
